Snaffle something super healthy in a flash with these chicken and avocado wraps. Ideal for a speedy snack on the go or tasty lunch.
Nutritional value per serving:
1 tsp of melted coconut oil
1 red pepper, chopped
1 red onion, chopped
1 tbsp Jamaican Jerk spice mix
4 tortilla wraps
Lettuce leaves and coconut cream to garnish
Heat 1 tsp of coconut oil in a pan over medium-high heat. Add chicken and cook for about 2-3 minutes.
Add the remaining tsp of coconut oil, red pepper, chopped onion and Jamaican Jerk spice mix. Cook, stirring constantly for about 2-5 minutes.
To serve, assemble each wrap by spreading with a little coconut cream (if liked), then pile on some lettuce leaves, avocado and chicken mix. Roll up tightly to make a big cigar, cut in half and eat with your fingers. Enjoy!
